An undeniable focus of interest for the Couto-Mixto team is the wine sector. It has been an object of interest and an area of work that continually shows its capacity for renewal and innovation. The interdisciplinary team is endeavouring to apply for tenders in this area, which will not only allow the Portuguese wine industry to be updated, but also the recovery of vineyards nationwide. It's an endeavour that simultaneously seeks to promote the sustainability of the land and the production of high-quality wines.

Vinification of still wines (red, white, rosé, palhete, clarete, etc.) and sparkling wines using conventional, natural, and low-intervention techniques

Maturation monitoring and determination of harvest dates;
Technical assessment of winery facilities;
Development of customised vinification protocols;
