The creators gathered with friends and family to celebrate the launch of the new wine brand.

TAU! is a locally produced, small-scale vinho verde in which the vines and grapes have been carefully selected and handled. The launch edition is the result of the 2021 harvest and features grapes from the Alvarinho, Loureiro and Trajadura varieties, designed and produced in partnership with Filipe Lemos.

The launch event for this white vinho verde took place in Barcelos, at Quinta da Pegadinha, where Filipe Lemos is the winemaker and from where the Loureiro blend was harvested, one of the two blends that make up TAU! 2021. The other batch, of the Alvarinho and Trajadura grape varieties, comes from a local producer whose vineyard had been designed by Couto-Mixto. Present at the event were all those who have contributed to the project, be it through the technical, creative and artistic conception of the project, the harvest and bottling. There were also family members of the TAU! team, whose support for its realisation was fundamental. So this event served not only as a launch for the project but also, and above all, as a gesture of thanks to everyone involved.

The artistic team was present and took part in the creative conception of the whole event, as well as the photographic and video recording. The artist responsible for the graphic and aesthetic design of the bottle, Hugo Oliveira, was involved in each of the wine boxes offered, personalising them for each of those present.

TAU! 2021 Launch

The grapes for the new edition of TAU! have already been picked - the launch is scheduled for next year.

TAU! 2023 marks the third edition of this unapologetic wine. The project continues to reflect the principles with which it was conceived, maintaining small-scale production with a responsible social and environmental commitment. Defying convention, TAU! is not produced from grapes harvested prematurely and is not bottled at the beginning of its ageing period in the cellar, as is usual with vinho verde. On the contrary, careful viticulture allows for the harvesting of ripe grapes and longer cellar ageing, resulting in a distinctive wine. Once again, the artistic initiative will be integrated into its design, distinguishing TAU! in the context of vinho verde.

The harvest for the 2023 campaign, carried out in a century-old old vineyard in the Barcelos region, with Arinto grapes, was produced in a certified _[Integrated Production](https://www.dgadr.gov.pt/producao-integrada)_ system - an agricultural system for producing high quality food and other food products, with rational management of natural resources and favouring the use of natural regulation mechanisms instead of production factors, thus contributing to sustainable agriculture.

A group of friends rolled up their sleeves to harvest the wine co-signed by Couto-Mixto.

O TAU! 2022 marca a segunda edição deste vinho inconformado. O projeto continua a refletir os princípios com que foi concebido, mantendo a produção em pequena escala, com um compromisso social e ambiental responsável. TAU! is a Vinho Verde that bridges two distinct realms - oenology and art - unlocking new possibilities for artistic creation within the wine production process.


TAU! is a joint creation between Couto-Mixto and Filipe Lemos, winemaker at Quinta da Pegadinha, where this wine was born. A project that creates a bridge between two distinct spheres - oenology and art - opening up new possibilities for creative integration during the wine production process.

**Enology**: These are small-scale local productions in which vines and grapes have been carefully selected and manipulated. Grapes from different vineyards, grape varieties and batches are used every year, resulting in different flavours - the opposite of what happens with classic wines. However, the consumer will always be guaranteed the very fine quality that characterises every edition of TAU!

**Art: Each edition of TAU! sees a new collaboration with an artist who incorporates their creative ideas into the process of conceptualising the final wine.

Implementation and management of the Lá da Lama vineyard

On the land where a new vineyard now stands, wine that is recognized both regionally and nationally has been produced. Following the most recent division of the well-known farm, the new owner renovated the entire vineyard. To transform production, Couto-Mixto resorted to VITIS, which supported an area of 8 hectares. The grape varieties present include Loureiro, Trajadura, Alvarinho, and Arinto.

Made up of a team specialising in agricultural innovation and environmental sustainability, Couto-Mixto stands out in the environment in which it operates, providing qualified advice that guarantees that all the client's objectives are achieved, without losing sight of presenting an effective response to current environmental and social concerns.

Tartaric and calcium stabilisation by electrodialysis. Reduction of volatile acidity by nano-filtration and electrodialysis. Reduction of volatile phenols by nano-filtration. Tangential filtration.
